  1. 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
  2. 2. Rub the meat generously with salt and pepper.
  3. 3. Rinse a baking pan briefly with cold water.
  4. 4. Place the meat into the prepared pan.
  5. 5. Roast the meat in the oven for about 45 minutes.
  6. 6. Let the puff pastry sheets thaw in the meantime.
  7. 7. Lightly dust a work surface with flour.
  8. 8. Lay the pastry sheets slightly overlapping on the surface.
  9. 9. Roll the pastry out thinly into a rectangle measuring approximately 30 by 20 centimeters.
  10. 10. Rinse the rosemary under running water.
  11. 11. Shake the rosemary dry.
  12. 12. Finely chop the rosemary needles.
  13. 13. Sprinkle the rosemary and fresh pepper over the pastry.
  14. 14. Pat the roast dry with a kitchen towel.
  15. 15. Wrap the meat tightly in the pastry.
  16. 16. Place the package seam-side down into the clean baking pan.
  17. 17. Whisk the egg yolk in a small bowl.
  18. 18. Brush the surface of the pastry with the egg yolk.
  19. 19. Optionally decorate the pastry with leftover dough pieces.
  20. 20. Bake the dish for another 45 minutes in the oven.
  21. 21. Remove the meat from the oven.
  22. 22. Place it on a serving platter.
  23. 23. Serve the meat with your choice of vegetables.
