Ingredients
- 1 kg Kassler (boneless)
- 200 g puff pastry (frozen)
- 1 sprig rosemary (small)
- pepper (from the mill)
- salt
- 2 egg yolks
- flour (for the work surface)
Instructions
- 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 2. Rub the meat generously with salt and pepper.
- 3. Rinse a baking pan briefly with cold water.
- 4. Place the meat into the prepared pan.
- 5. Roast the meat in the oven for about 45 minutes.
- 6. Let the puff pastry sheets thaw in the meantime.
- 7. Lightly dust a work surface with flour.
- 8. Lay the pastry sheets slightly overlapping on the surface.
- 9. Roll the pastry out thinly into a rectangle measuring approximately 30 by 20 centimeters.
- 10. Rinse the rosemary under running water.
- 11. Shake the rosemary dry.
- 12. Finely chop the rosemary needles.
- 13. Sprinkle the rosemary and fresh pepper over the pastry.
- 14. Pat the roast dry with a kitchen towel.
- 15. Wrap the meat tightly in the pastry.
- 16. Place the package seam-side down into the clean baking pan.
- 17. Whisk the egg yolk in a small bowl.
- 18. Brush the surface of the pastry with the egg yolk.
- 19. Optionally decorate the pastry with leftover dough pieces.
- 20. Bake the dish for another 45 minutes in the oven.
- 21. Remove the meat from the oven.
- 22. Place it on a serving platter.
- 23. Serve the meat with your choice of vegetables.
