🍽️ Kassler on Lentil Stew

Ingredients
- 400 g brown lentils
- 1 bay leaf
- 1 kitchen herbs (e.g. thyme, marjoram; parsley)
- 1 onion
- 1 carrot
- 150 g celeriac
- 1 tbsp vegetable oil
- 1 tbsp wine vinegar
- salt
- pepper (from the mill)
- 4 slices Kassler
- marjoram (for garnish)
Instructions
- 1. Rinse the lentils in a sieve under running water.
- 2. Place the lentils in a pot with boiling water.
- 3. Simmer the lentils on low heat for about 30 minutes.
- 4. Add the bay leaf and herbs to the pot after 15 minutes of cooking time.
- 5. Peel the onion, the carrot, and the celery.
- 6. Cut the vegetables into small cubes.
- 7. Dice the bacon into small pieces as well.
- 8. Heat 1 tablespoon of oil in a frying pan.
- 9. Sauté the bacon and vegetables for 2 to 3 minutes.
- 10. Remove the bay leaf and herbs from the lentils.
- 11. Drain the lentils through a sieve.
- 12. Mix the drained lentils with the bacon and vegetable mixture.
- 13. Season the mixture with vinegar, salt, and pepper.
- 14. Heat the remaining oil in a clean frying pan.
- 15. Fry the Kassler (smoked pork loin) on both sides for 2 to 3 minutes until golden brown.
- 16. Season the Kassler with pepper.
- 17. Place the Kassler on top of the lentil dish.
- 18. Garnish the dish with marjoram.
- 19. Serve the meal warm.
