  1. 1. Rinse the lentils in a sieve under running water.
  2. 2. Place the lentils in a pot with boiling water.
  3. 3. Simmer the lentils on low heat for about 30 minutes.
  4. 4. Add the bay leaf and herbs to the pot after 15 minutes of cooking time.
  5. 5. Peel the onion, the carrot, and the celery.
  6. 6. Cut the vegetables into small cubes.
  7. 7. Dice the bacon into small pieces as well.
  8. 8. Heat 1 tablespoon of oil in a frying pan.
  9. 9. Sauté the bacon and vegetables for 2 to 3 minutes.
  10. 10. Remove the bay leaf and herbs from the lentils.
  11. 11. Drain the lentils through a sieve.
  12. 12. Mix the drained lentils with the bacon and vegetable mixture.
  13. 13. Season the mixture with vinegar, salt, and pepper.
  14. 14. Heat the remaining oil in a clean frying pan.
  15. 15. Fry the Kassler (smoked pork loin) on both sides for 2 to 3 minutes until golden brown.
  16. 16. Season the Kassler with pepper.
  17. 17. Place the Kassler on top of the lentil dish.
  18. 18. Garnish the dish with marjoram.
  19. 19. Serve the meal warm.
