🍽️ Classic Potato Vinaigrette

Ingredients
- 200 g mealy cooking potatoes
- salt
- 1 handful parsley
- 4 tbsp wine vinegar
- 200 ml meat broth
- 1 tsp sugar
- pepper
- 1 pinch ground cumin
- 6 tbsp olive oil
Instructions
- 1. Thoroughly wash the potatoes under running water.
- 2. Peel the potatoes completely.
- 3. Cut the potatoes into coarse cubes.
- 4. Bring a pot of salted water to a boil.
- 5. Add the potato cubes to the boiling water.
- 6. Cook the potatoes for about 15 minutes until tender.
- 7. Rinse the parsley briefly under cold water.
- 8. Shake the parsley dry.
- 9. Finely chop the parsley.
- 10. Drain the cooked potatoes.
- 11. Mash the warm potatoes directly in the pot.
- 12. Stir the vinegar into the potato mixture.
- 13. Add the broth and stir well.
- 14. Add the sugar and mix it in.
- 15. Season the vinaigrette with salt.
- 16. Season with freshly ground pepper.
- 17. Season with ground cumin.
- 18. Stir the oil into the potato mixture.
- 19. Fold in the chopped parsley into the vinaigrette.
- 20. Finally, adjust the seasoning of the vinaigrette with salt and pepper.
