🍽️ Crispy Potato Tortilla with Pepper Sausage

Ingredients
- 200 g Chorizo
- 500 g floury potatoes
- 1 Onion
- 1 tbsp vegetable oil
- 6 Eggs
- 1 tbsp chopped parsley
Instructions
- 1. Slice the pepper sausage into thin rounds.
- 2. Wash the potatoes thoroughly.
- 3. Peel the potatoes.
- 4. Slice the potatoes into thin rounds.
- 5. Peel the onion.
- 6. Cut the onion in half.
- 7. Cut the onion halves into thin strips.
- 8. Heat one tablespoon of oil in a large frying pan.
- 9. Fry the sausage slices for about two minutes.
- 10. Add the potato slices to the sausage in the pan.
- 11. Add the onion strips to the pan.
- 12. Cook the vegetables and sausage while stirring constantly over medium heat.
- 13. Let the mixture simmer gently for ten to fifteen minutes.
- 14. Preheat the oven to 180 degrees Celsius fan setting.
- 15. Whisk the eggs in a separate bowl.
- 16. Season the eggs with salt.
- 17. Season the eggs with pepper.
- 18. Pour the egg mixture evenly over the potato and sausage mixture in the pan.
- 19. Place the pan in the preheated oven.
- 20. Bake the tortilla for ten to fifteen minutes until golden brown.
- 21. Remove the tortilla from the pan.
- 22. Invert the tortilla onto a warm plate.
- 23. Finely chop fresh parsley.
- 24. Sprinkle the finished tortilla with the parsley.
