🍽️ Your Potato Tortilla with Beans and Ham

Ingredients
- 500 g firm-cooking potatoes
- 1 onion
- 200 g kidney beans (can)
- 100 g corn (can)
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 4 eggs
- 4 tbsp sour cream
- 1 tbsp freshly chopped parsley
- 6 slices turkey ham (approx. 100 g)
Instructions
- 1. Peel the potatoes and cut them into cubes of about 1 cm.
- 2. Peel the onion and slice it into rings.
- 3. Pour the kidney beans and corn into a sieve.
- 4. Rinse the vegetables and grain thoroughly and let them drain well.
- 5. Heat the olive oil in a frying pan.
- 6. Fry the potato cubes in it for about 10 minutes over not too high heat.
- 7. Add the onion rings to the pan.
- 8. Continue to fry everything slowly for another 5 minutes until the potatoes are soft.
- 9. Stir the mixture occasionally.
- 10. Season the potatoes and onions with salt and pepper.
- 11. Beat the eggs in a separate bowl.
- 12. Mix the eggs with the sour cream and the chopped parsley.
- 13. Season the egg mixture with salt and pepper as well.
- 14. Pour the egg mixture evenly over the potatoes in the pan.
- 15. Sprinkle the drained corn and kidney beans over it.
- 16. Place the strips of turkey ham on top of the tortilla.
- 17. Let the tortilla set covered for 10 to 15 minutes over low heat.
- 18. Cut the finished tortilla into 4 pieces.
- 19. Serve the pieces garnished with lettuce leaves as you like.
