  3. 3. Peel the onions and chop them finely.
  4. 4. Heat half of the olive oil in a frying pan.
  5. 5. Add the potato slices and onions to the hot pan.
  6. 6. Cook the vegetables over medium heat for 25 minutes.
  7. 7. Season the mixture with salt and pepper.
  8. 8. Let the potatoes cool down briefly.
  9. 9. Whisk the eggs in a separate bowl.
  10. 10. Season the eggs with salt and pepper as well.
  11. 11. Mix the cooled potatoes with the seasoned eggs.
  12. 12. Add the remaining olive oil to the pan.
  13. 13. Pour the egg and potato mixture into the pan.
  14. 14. Cook the tortilla for 6 minutes until the bottom is set.
  15. 15. Place a large plate over the frying pan.
  16. 16. Carefully flip the tortilla onto the plate.
  17. 17. Slide the tortilla back into the pan so the uncooked side is facing up.
  18. 18. Cook the tortilla for another 6 minutes.
  19. 19. Cut the finished tortilla into pieces.
  20. 20. Serve the tortilla on plates.
