🍽️ Crispy Potato Tortilla

Ingredients
- 350 g floury potatoes
- 1 onion
- 3 tbsp olive oil
- 4 eggs
- salt
- pepper
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Peel the onions and chop them finely.
- 4. Heat half of the olive oil in a frying pan.
- 5. Add the potato slices and onions to the hot pan.
- 6. Cook the vegetables over medium heat for 25 minutes.
- 7. Season the mixture with salt and pepper.
- 8. Let the potatoes cool down briefly.
- 9. Whisk the eggs in a separate bowl.
- 10. Season the eggs with salt and pepper as well.
- 11. Mix the cooled potatoes with the seasoned eggs.
- 12. Add the remaining olive oil to the pan.
- 13. Pour the egg and potato mixture into the pan.
- 14. Cook the tortilla for 6 minutes until the bottom is set.
- 15. Place a large plate over the frying pan.
- 16. Carefully flip the tortilla onto the plate.
- 17. Slide the tortilla back into the pan so the uncooked side is facing up.
- 18. Cook the tortilla for another 6 minutes.
- 19. Cut the finished tortilla into pieces.
- 20. Serve the tortilla on plates.
