🍽️ Crispy Potato Patties with Caviar

Ingredients
- 700 g potatoes
- salt
- pepper (from the mill)
- nutmeg
- 1 tbsp potato starch
- 3 egg yolks
- 1 tbsp soft butter
- 4 tbsp whipping cream
- 2 tbsp chopped parsley
- ghee (for frying)
- 150 g crème fraîche
- 40 g keta caviar (feel free to use more)

Instructions
- 1. Peel the potatoes.
- 2. Place them in salted water and boil for about 30 minutes until tender.
- 3. Drain the water and let the potatoes cool down slightly.
- 4. Press the potatoes through a potato ricer into a large mixing bowl.
- 5. Add starch, egg yolk, butter, cream, chopped parsley, salt, pepper, and nutmeg to the bowl.
- 6. Mix all ingredients thoroughly until a uniform dough forms.
- 7. Dust your work surface with flour.
- 8. Shape the dough on the floured surface into a long roll.
- 9. Cut the roll into slices about 2 centimeters thick.
- 10. Heat butter in a frying pan over medium heat.
- 11. Fry the potato slices in the hot butter for about 3 to 4 minutes on each side until golden brown.
- 12. Remove the finished patties from the pan and place them on a plate.
- 13. Place a dollop of crème fraîche on each patty.
- 14. Garnish them to taste with keta caviar and salmon caviar.
