  1. 1. Peel the potatoes.
  2. 2. Place them in salted water and boil for about 30 minutes until tender.
  3. 3. Drain the water and let the potatoes cool down slightly.
  4. 4. Press the potatoes through a potato ricer into a large mixing bowl.
  5. 5. Add starch, egg yolk, butter, cream, chopped parsley, salt, pepper, and nutmeg to the bowl.
  6. 6. Mix all ingredients thoroughly until a uniform dough forms.
  7. 7. Dust your work surface with flour.
  8. 8. Shape the dough on the floured surface into a long roll.
  9. 9. Cut the roll into slices about 2 centimeters thick.
  10. 10. Heat butter in a frying pan over medium heat.
  11. 11. Fry the potato slices in the hot butter for about 3 to 4 minutes on each side until golden brown.
  12. 12. Remove the finished patties from the pan and place them on a plate.
  13. 13. Place a dollop of crème fraîche on each patty.
  14. 14. Garnish them to taste with keta caviar and salmon caviar.
