🍽️ Creamy Potato and Radicchio Soup with Crispy Mackerel

Ingredients
- 600 g mealy cooking potatoes
- 1 apple
- 3 onions
- 1.2 l meat broth (instant)
- 2 bay leaves
- salt
- pepper (from the mill)
- 1 radicchio (large head)
- 1 tbsp germ oil
- 200 g smoked pepper mackerel
Instructions
- 1. Peel the potatoes, the apple, and the onions.
- 2. Dice all three ingredients into small cubes.
- 3. Place the diced ingredients into a pot.
- 4. Pour in the vegetable broth.
- 5. Add the bay leaves to the pot.
- 6. Place the pot on the stove and set the heat to medium.
- 7. Place a lid on the pot.
- 8. Let the soup simmer for 20 minutes.
- 9. Remove the bay leaves from the soup.
- 10. Blend the soup until creamy using a hand blender.
- 11. Season the soup with salt and pepper.
- 12. Wash the radicchio under running water.
- 13. Remove the hard stems from the bottom of the vegetable.
- 14. Slice the radicchio into thin strips.
- 15. Heat some oil in a frying pan.
- 16. Fry the radicchio strips in the pan.
- 17. Slice the mackerel into strips.
- 18. Ladle the soup into individual bowls.
- 19. Place the mackerel strips on top of the soup.
- 20. Distribute the fried radicchio over the soup.
- 21. Serve the dish while warm.
