🍽️ Creamy Potato Soup with Smoked Salmon

Ingredients
- 600 g potatoes
- 2 garlic cloves
- 2 tbsp olive oil
- 750 ml vegetable broth
- 100 g sour cream
- 2 tbsp fresh chopped parsley
- salt
- curry powder
- white pepper
- 150 g smoked salmon
Instructions
- 1. Peel the potatoes and cut them into small cubes.
- 2. Peel the garlic and chop it finely.
- 3. Heat oil in a pot and briefly sauté the potato cubes and garlic.
- 4. Deglaze the mixture with the vegetable broth.
- 5. Let the soup simmer on low heat for about 15 minutes.
- 6. The potatoes should be soft but still recognizable as chunks.
- 7. Remove the pot from the heat.
- 8. Stir the sour cream into the soup.
- 9. Chop the parsley and stir it in as well.
- 10. Season the soup to taste with salt, a pinch of curry powder, and white pepper.
- 11. Divide the soup among small plates or bowls.
- 12. Cut the smoked salmon into thin strips.
- 13. Place the salmon strips on top of the soup.
- 14. Serve the soup immediately.
