  3. 3. Heat oil in a pot and briefly sauté the potato cubes and garlic.
  4. 4. Deglaze the mixture with the vegetable broth.
  5. 5. Let the soup simmer on low heat for about 15 minutes.
  6. 6. The potatoes should be soft but still recognizable as chunks.
  7. 7. Remove the pot from the heat.
  8. 8. Stir the sour cream into the soup.
  9. 9. Chop the parsley and stir it in as well.
  10. 10. Season the soup to taste with salt, a pinch of curry powder, and white pepper.
  11. 11. Divide the soup among small plates or bowls.
  12. 12. Cut the smoked salmon into thin strips.
  13. 13. Place the salmon strips on top of the soup.
  14. 14. Serve the soup immediately.
