🍽️ Crispy Potato Schnitzels

Ingredients
- 150 g firm-cooking potatoes
- 2 egg yolks
- salt
- pepper
- 4 turkey schnitzel (approx. 150 g each)
- 1 tbsp rapeseed oil
- 2 sprigs parsley
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Grate the potatoes coarsely.
- 3. Squeeze the grated potatoes well to remove excess liquid.
- 4. Place the potatoes in a bowl.
- 5. Add the egg yolks to the potato mixture.
- 6. Season the mixture with salt and pepper.
- 7. Mix everything well together.
- 8. Season the schnitzels with salt and pepper.
- 9. Heat oil in a frying pan over medium heat.
- 10. Fry the schnitzels for about 2 minutes on each side.
- 11. Place the pre-fried schnitzels in a shallow baking dish.
- 12. Spread the potato mixture evenly over the schnitzels.
- 13. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
- 14. Bake the schnitzels in the oven for 10 to 15 minutes until golden brown.
- 15. Wash the parsley thoroughly.
- 16. Shake the parsley dry.
- 17. Remove the schnitzels from the oven.
- 18. Plate the potato schnitzels on pre-warmed plates.
- 19. Garnish the schnitzels with the fresh parsley.
- 20. Serve the dish immediately.
