  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Grate the potatoes coarsely.
  3. 3. Squeeze the grated potatoes well to remove excess liquid.
  4. 4. Place the potatoes in a bowl.
  5. 5. Add the egg yolks to the potato mixture.
  6. 6. Season the mixture with salt and pepper.
  7. 7. Mix everything well together.
  8. 8. Season the schnitzels with salt and pepper.
  9. 9. Heat oil in a frying pan over medium heat.
  10. 10. Fry the schnitzels for about 2 minutes on each side.
  11. 11. Place the pre-fried schnitzels in a shallow baking dish.
  12. 12. Spread the potato mixture evenly over the schnitzels.
  13. 13. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
  14. 14. Bake the schnitzels in the oven for 10 to 15 minutes until golden brown.
  15. 15. Wash the parsley thoroughly.
  16. 16. Shake the parsley dry.
  17. 17. Remove the schnitzels from the oven.
  18. 18. Plate the potato schnitzels on pre-warmed plates.
  19. 19. Garnish the schnitzels with the fresh parsley.
