  3. 3. Boil the potatoes for about 25 minutes until they are soft.
  4. 4. Clean the spring onions and rinse them.
  5. 5. Finely chop the spring onions.
  6. 6. Heat 10 grams of butter in a pan.
  7. 7. Sauté the spring onions in the hot butter.
  8. 8. Heat the milk in a pot.
  9. 9. Drain the cooked potatoes.
  10. 10. Mash the potatoes with a potato masher.
  11. 11. Add the warm milk to the mashed potatoes gradually.
  12. 12. Add the remaining butter in small pieces.
  13. 13. Stir the butter vigorously into the mixture with a whisk.
  14. 14. Season the potato snow with salt, pepper, and nutmeg.
  15. 15. Fold in the sautéed spring onions.
  16. 16. Place the potato snow onto the plates.
  17. 17. Top with salmon caviar and smoked salmon.
  18. 18. Garnish the dish with dill or dill flowers as desired.
  19. 19. Serve the potato snow immediately.
