🍽️ Fluffy Potato Snow with Salmon Caviar and Smoked Salmon

Ingredients
- 600 g mealy-cooking potatoes
- salt, pepper from the mill
- 1 bunch spring onions
- 100 ml milk
- 40 g butter
- grated nutmeg
- 50 g trout or salmon caviar
- 100 g thin smoked salmon
- dill (for garnishing)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes in half and place them in salted water.
- 3. Boil the potatoes for about 25 minutes until they are soft.
- 4. Clean the spring onions and rinse them.
- 5. Finely chop the spring onions.
- 6. Heat 10 grams of butter in a pan.
- 7. Sauté the spring onions in the hot butter.
- 8. Heat the milk in a pot.
- 9. Drain the cooked potatoes.
- 10. Mash the potatoes with a potato masher.
- 11. Add the warm milk to the mashed potatoes gradually.
- 12. Add the remaining butter in small pieces.
- 13. Stir the butter vigorously into the mixture with a whisk.
- 14. Season the potato snow with salt, pepper, and nutmeg.
- 15. Fold in the sautéed spring onions.
- 16. Place the potato snow onto the plates.
- 17. Top with salmon caviar and smoked salmon.
- 18. Garnish the dish with dill or dill flowers as desired.
- 19. Serve the potato snow immediately.
