  1. 1. Wash the potatoes and steam them in salted water with the cumin for about 30 minutes. Let them cool slightly, peel them, let them steam off, and slice them. Place them in a bowl.
  2. 2. Peel the onion and dice it finely. Bring it to a boil with the broth, the mustard, the vinegar, the salt, and the pepper. Mix it loosely into the potatoes and let it steep for about 20 minutes.
  3. 3. Rinse the arugula, shake it dry, clean it, and chop it roughly. Mix it together with the parsley and the oil into the salad, season to taste, and serve it.
