🍽️ Classic Potato Salad with Smoked Trout and Capers

Ingredients
- 800 g potatoes (waxy)
- 1 red onion
- 4 tbsp sour cream
- 2 tbsp mayonnaise
- wine vinegar
- 4 tbsp vegetable broth
- salt
- 2 spring onions
- 300 g smoked trout
- 2 tbsp capers
- 1 handful fresh herbs (e.g. parsley; cress)
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Steam the potatoes in a steamer or sieve over boiling water for about 25 minutes until tender.
- 3. Peel the warm potatoes and let them steam off for a moment.
- 4. Slice the peeled potatoes into even rounds.
- 5. Peel the onion and cut it into thin strips.
- 6. Whisk the sour cream in a bowl with the mayonnaise.
- 7. Pour in the cider vinegar and vegetable broth into the cream mixture and stir until smooth.
- 8. Wash the spring onions and trim off any dry ends.
- 9. Finely chop the spring onions and fold them into the salad dressing.
- 10. Season the sauce to taste with a pinch of salt.
- 11. Gently fold the potato slices and onion strips into the dressing.
- 12. Divide the potato salad among the plates.
- 13. Shred the smoked trout into coarse flakes using your fingers.
- 14. Distribute the fish pieces evenly over the potato salad.
- 15. Sprinkle the dish with capers and fresh herbs.
- 16. Serve the salad immediately.
