🍽️ Warm Potato Salad with Peppers and Spring Onions

Ingredients
- 800 g potatoes (waxy)
- 1 shallot
- 2 bell peppers
- 4 spring onions
- 100 g cheese (e.g. Emmental, Gouda)
- 0.5 bunch chives
- 200 ml vegetable broth
- 3 tbsp white wine vinegar
- 3 tbsp oil
- salt
- pepper (from the mill)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the unpeeled potatoes until tender, for about 30 minutes.
- 3. Peel the warm potatoes.
- 4. Let them cool down briefly to allow steam to escape.
- 5. Slice the potatoes.
- 6. Peel the shallot.
- 7. Dice the shallot finely.
- 8. Wash the bell peppers.
- 9. Halve the bell peppers.
- 10. Remove the core and seeds.
- 11. Cut the flesh into thin strips.
- 12. Wash the spring onions.
- 13. Trim off the dry ends.
- 14. Slice the spring onions diagonally into thin rounds.
- 15. Cut the cheese into strips.
- 16. Cut the chives into fine rings.
- 17. Heat 1 tablespoon of oil in a pan.
- 18. Sauté the diced shallot in the hot oil.
- 19. Add the sliced spring onions.
- 20. Deglaze the pan with the broth.
- 21. Pour the hot liquid over the potato slices.
- 22. Stir in the vinegar.
- 23. Add the paprika powder.
- 24. Fold in the cheese strips.
- 25. Mix the chives into the mixture.
- 26. Let the salad sit for about 10 minutes.
- 27. Add the remaining oil.
- 28. Season the salad with salt and pepper to taste.
