🍽️ Classic potato salad with yogurt dressing and egg

Ingredients
- 1 kg peeled potatoes
- 4 sprigs mint
- 4 eggs
- 3 garlic cloves
- 2 tsp grainy Dijon mustard
- 200 g Greek yogurt (10%)
- 4 tbsp mayonnaise
- salt
- pepper
- 2 tbsp capers
- mint (cut into strips for garnishing)
Instructions
- 1. Peel the potatoes and cut them into small cubes. Wash the mint, shake it dry, and slice the leaves into thin strips. Boil the eggs for 8 minutes until hard-boiled, rinse them under cold water, peel them, and cut them in half. Peel the garlic and chop it finely.
- 2. Mix the chopped garlic, mustard, yogurt, and mayonnaise to make a sauce. Season with salt and pepper. Stir in the capers and mint, then mix everything with the potato cubes.
- 3. Serve the salad in small bowls. Arrange the halved eggs on top and garnish with the mint strips.
