  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into small cubes.
  3. 3. Bring water to a boil and add some salt and the bay leaf.
  4. 4. Boil the potato cubes in it for about 15 minutes until tender.
  5. 5. Peel the apples and cut them into quarters.
  6. 6. Remove the core from the apple quarters.
  7. 7. Cut the apple pieces into small cubes as well.
  8. 8. Add the apple cubes to the potatoes during the last 1 to 2 minutes of cooking time.
  9. 9. Drain the vegetables and apples together in a colander.
  10. 10. Remove the bay leaf from the mixture.
  11. 11. Let the potato and apple pieces drain well.
  12. 12. Peel the onion and cut it in half.
  13. 13. Cut the onion halves into thin strips.
  14. 14. Rinse the beans in a colander with cold water.
  15. 15. Let the beans drain well as well.
  16. 16. Pat the salted herring dry with a kitchen towel.
  17. 17. Cut the salted herring into bite-sized pieces.
  18. 18. Wash the parsley and shake it dry.
  19. 19. Pluck the parsley leaves from the stems.
  20. 20. Finely chop the parsley leaves.
  21. 21. Whisk together vinegar, oil, honey, salt, and pepper for the dressing.
  22. 22. Season the dressing to taste.
