🍽️ Autumn Potato and Bean Salad with Salted Herring

Ingredients
- 600 g firm-cooking potatoes
- salt
- 1 bay leaf
- 2 apples
- 1 red onion
- 400 g kidney beans (can)
- 300 g matjes fillets
- 2 sprigs parsley
- 4 tbsp apple cider vinegar
- 4 tbsp sunflower oil
- 1 tsp liquid honey
- pepper (from the mill)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Bring water to a boil and add some salt and the bay leaf.
- 4. Boil the potato cubes in it for about 15 minutes until tender.
- 5. Peel the apples and cut them into quarters.
- 6. Remove the core from the apple quarters.
- 7. Cut the apple pieces into small cubes as well.
- 8. Add the apple cubes to the potatoes during the last 1 to 2 minutes of cooking time.
- 9. Drain the vegetables and apples together in a colander.
- 10. Remove the bay leaf from the mixture.
- 11. Let the potato and apple pieces drain well.
- 12. Peel the onion and cut it in half.
- 13. Cut the onion halves into thin strips.
- 14. Rinse the beans in a colander with cold water.
- 15. Let the beans drain well as well.
- 16. Pat the salted herring dry with a kitchen towel.
- 17. Cut the salted herring into bite-sized pieces.
- 18. Wash the parsley and shake it dry.
- 19. Pluck the parsley leaves from the stems.
- 20. Finely chop the parsley leaves.
- 21. Whisk together vinegar, oil, honey, salt, and pepper for the dressing.
- 22. Season the dressing to taste.
- 23. Mix all prepared ingredients with the dressing.
- 24. Let the salad marinate for about 10 minutes.
- 25. Then serve the salad.
