🍽️ Crispy Potato Rösti with Fresh Quark Cream

Ingredients
- 1 kg waxy potatoes (from the day before)
- salt (pepper)
- 4 tbsp ghee
- 1 bunch parsley
- 250 g quark
Instructions
- 1. Peel the potatoes thoroughly.
- 2. Grate the peeled potatoes using a coarse grater.
- 3. Season the grated potatoes with salt and pepper.
- 4. Heat the ghee in a non-stick frying pan.
- 5. Take spoonfuls of the potato mixture and place them into the hot pan.
- 6. Press the mixture flat in the pan.
- 7. Fry the rösti on the first side for about 7 minutes until golden brown.
- 8. Flip the rösti and fry the second side for another 7 minutes until crispy.
- 9. Wash the parsley under running water.
- 10. Finely chop the parsley.
- 11. Mix half of the chopped parsley with the quark.
- 12. Season the quark and parsley mixture with salt and pepper.
- 13. Place the finished potato rösti onto the plates.
- 14. Add a dollop of the quark mixture on top of each pancake.
- 15. Garnish the rösti with the remaining fresh parsley.
