  1. 1. Peel the potatoes thoroughly.
  2. 2. Grate the peeled potatoes using a coarse grater.
  3. 3. Season the grated potatoes with salt and pepper.
  4. 4. Heat the ghee in a non-stick frying pan.
  5. 5. Take spoonfuls of the potato mixture and place them into the hot pan.
  6. 6. Press the mixture flat in the pan.
  7. 7. Fry the rösti on the first side for about 7 minutes until golden brown.
  8. 8. Flip the rösti and fry the second side for another 7 minutes until crispy.
  9. 9. Wash the parsley under running water.
  10. 10. Finely chop the parsley.
  11. 11. Mix half of the chopped parsley with the quark.
  12. 12. Season the quark and parsley mixture with salt and pepper.
  13. 13. Place the finished potato rösti onto the plates.
  14. 14. Add a dollop of the quark mixture on top of each pancake.
  15. 15. Garnish the rösti with the remaining fresh parsley.
