🍽️ Crispy Potato Rösti with Fresh Herb Quark

Ingredients
- 400 g large waxy potatoes (2 large waxy potatoes)
- 3 tbsp rapeseed oil
- 1 bunch dill
- 1 bunch chives
- 1 apple
- 150 g low-fat quark
- salt
- pepper
Instructions
- 1. Peel the potatoes.
- 2. Rinse them under running water.
- 3. Dry the potatoes with a kitchen towel.
- 4. Grate the potatoes coarsely.
- 5. Heat the oil in a non-stick pan.
- 6. Take two tablespoons of the grated potato at a time.
- 7. Place the portions into the hot pan.
- 8. Press the potatoes down into flat, round rösti.
- 9. Fry the rösti in batches over medium heat.
- 10. Fry each side for four to five minutes until golden brown.
- 11. Wash the fresh herbs under cold water.
- 12. Shake the herbs dry.
- 13. Finely chop the herbs with a knife.
- 14. Wash the apple thoroughly.
- 15. Dry the apple with a cloth.
- 16. Cut the apple into four quarters.
- 17. Remove the core from the apple pieces.
- 18. Slice the apple quarters into thin slices.
- 19. Mix the quark with the chopped herbs.
- 20. Fold the apple slices into the quark.
- 21. Season the mixture with salt and pepper.
- 22. Place the finished rösti on kitchen paper.
- 23. Let the excess oil drain off.
- 24. Serve the rösti together with the herb quark.
