  1. 1. Peel the potatoes.
  2. 2. Rinse them under running water.
  3. 3. Dry the potatoes with a kitchen towel.
  4. 4. Grate the potatoes coarsely.
  5. 5. Heat the oil in a non-stick pan.
  6. 6. Take two tablespoons of the grated potato at a time.
  7. 7. Place the portions into the hot pan.
  8. 8. Press the potatoes down into flat, round rösti.
  9. 9. Fry the rösti in batches over medium heat.
  10. 10. Fry each side for four to five minutes until golden brown.
  11. 11. Wash the fresh herbs under cold water.
  12. 12. Shake the herbs dry.
  13. 13. Finely chop the herbs with a knife.
  14. 14. Wash the apple thoroughly.
  15. 15. Dry the apple with a cloth.
  16. 16. Cut the apple into four quarters.
  17. 17. Remove the core from the apple pieces.
  18. 18. Slice the apple quarters into thin slices.
  19. 19. Mix the quark with the chopped herbs.
  20. 20. Fold the apple slices into the quark.
  21. 21. Season the mixture with salt and pepper.
  22. 22. Place the finished rösti on kitchen paper.
  23. 23. Let the excess oil drain off.
  24. 24. Serve the rösti together with the herb quark.
