Ingredients
- 800 g potatoes
- 1 tbsp oil
- 1 clove garlic
- 2 tbsp tomato paste
- 0.5 l vegetable broth
- 1 sprig rosemary
- 0.5 tsp paprika powder
- 1 pinch cumin
- 0.5 bunch spring onions
- 1 tbsp whipping cream
- 1 tsp flour
- salt
- pepper
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Cut the potatoes in half lengthwise.
- 3. Heat the oil in a large pot.
- 4. Peel the garlic clove.
- 5. Crush the garlic and add it to the pot.
- 6. Sauté the garlic briefly.
- 7. Stir in the tomato paste.
- 8. Add the potato halves to the pot.
- 9. Pour in the vegetable broth.
- 10. Remove the rosemary needles from the stems.
- 11. Stir in the rosemary needles, paprika powder, and cumin.
- 12. Place a lid on the pot.
- 13. Simmer the dish gently for 20 to 30 minutes.
- 14. Clean the spring onions.
- 15. Slice the green ends of the spring onions into rings.
- 16. Set the onion rings aside.
- 17. Cut the remaining part of the spring onions into pieces.
- 18. Add the spring onion pieces to the potatoes.
- 19. Whisk the cream with the flour in a small bowl.
- 20. Stir the cream-flour mixture into the potatoes.
- 21. Let the ragout simmer briefly.
- 22. Season the dish to taste with salt and pepper.
- 23. Sprinkle the finished dish with the prepared onion rings.
