🍽️ Irish-style Potato Pancakes

Ingredients
- 500 g floury potatoes
- 2 eggs
- 225 g spelt wholemeal flour
- 1.5 tsp baking powder
- 300 ml buttermilk
- salt
- pepper
- 20 g butter (1 heaped tbsp)
Instructions
- 1. Thoroughly wash two-thirds of the potatoes.
- 2. Place the potatoes in boiling water.
- 3. Cook them for about 20 minutes until tender.
- 4. Drain the water and rinse the potatoes with cold water to cool them down.
- 5. Peel the cooled potatoes.
- 6. Press the potatoes through a potato masher to create mash.
- 7. Peel the remaining potatoes.
- 8. Wash the peeled potatoes.
- 9. Grate the potatoes finely.
- 10. Place the grated potatoes in a clean kitchen towel.
- 11. Squeeze the potatoes firmly in the towel to remove excess liquid.
- 12. Separate the eggs by dividing the yolks from the whites.
- 13. Mix the egg yolks with flour and baking powder.
- 14. Add the potato mash and grated potatoes to the yolk mixture.
- 15. Pour in the buttermilk and stir everything well.
- 16. Season the batter with salt and pepper to taste.
- 17. Add a pinch of salt to the egg whites.
- 18. Whip the egg whites until they form stiff peaks.
- 19. Gently fold the whipped egg whites into the batter.
- 20. Melt some butter in two pans.
- 21. Pour half of the batter into the first pan.
- 22. Pour the other half of the batter into the second pan.
- 23. Fry the pancakes over medium heat.
- 24. Cook them for about 4 minutes on each side.
- 25. Cook until they are golden brown.
- 26. Place small flakes of butter on the finished pancakes.
