  1. 1. Thoroughly wash two-thirds of the potatoes.
  2. 2. Place the potatoes in boiling water.
  3. 3. Cook them for about 20 minutes until tender.
  4. 4. Drain the water and rinse the potatoes with cold water to cool them down.
  5. 5. Peel the cooled potatoes.
  6. 6. Press the potatoes through a potato masher to create mash.
  7. 7. Peel the remaining potatoes.
  8. 8. Wash the peeled potatoes.
  9. 9. Grate the potatoes finely.
  10. 10. Place the grated potatoes in a clean kitchen towel.
  11. 11. Squeeze the potatoes firmly in the towel to remove excess liquid.
  12. 12. Separate the eggs by dividing the yolks from the whites.
  13. 13. Mix the egg yolks with flour and baking powder.
  14. 14. Add the potato mash and grated potatoes to the yolk mixture.
  15. 15. Pour in the buttermilk and stir everything well.
  16. 16. Season the batter with salt and pepper to taste.
  17. 17. Add a pinch of salt to the egg whites.
  18. 18. Whip the egg whites until they form stiff peaks.
  19. 19. Gently fold the whipped egg whites into the batter.
  20. 20. Melt some butter in two pans.
  21. 21. Pour half of the batter into the first pan.
  22. 22. Pour the other half of the batter into the second pan.
  23. 23. Fry the pancakes over medium heat.
  24. 24. Cook them for about 4 minutes on each side.
  25. 25. Cook until they are golden brown.
  26. 26. Place small flakes of butter on the finished pancakes.
