🍽️ Creamy Mashed Potatoes with Roasted Pepper

Ingredients
- 700 g potatoes
- salt
- 2 red bell peppers
- 2 garlic cloves
- 1 knife tip cumin (ground)
- 1 tsp paprika powder (sweet)
- 1 tsp white wine vinegar
- 125 ml olive oil
Instructions
- 1. Peel the potatoes and rinse them under running water.
- 2. Cut the potatoes into small cubes.
- 3. Boil the potato cubes in salted water for about 20 minutes until tender.
- 4. Wash the pepper and remove the stem and seeds.
- 5. Halve the pepper and cut it into wide strips.
- 6. Preheat the grill or the oven to the highest setting.
- 7. Place the pepper strips skin-side up on the baking sheet.
- 8. Roast the pepper until the skin blisters and browns.
- 9. Remove the pepper from the oven and let it cool.
- 10. Remove the roasted skin from the pepper.
- 11. Cut the pepper flesh into small cubes.
- 12. Set aside three tablespoons of the pepper cubes.
- 13. Put the remaining pepper, spices, pressed garlic, one teaspoon of salt, vinegar, and olive oil into a blender.
- 14. Puree the mixture until smooth.
- 15. Drain the cooked potatoes.
- 16. Let the potatoes steam for a short while.
- 17. Mash the potatoes immediately or press them through a potato ricer.
- 18. Mix the mashed potatoes with the pepper puree.
