🍽️ Creamy Mashed Potatoes with Tender Okra

Ingredients
- 500 g okra pods
- 2 tbsp salt
- 4 tbsp vinegar
- 2 garlic cloves
- 800 g floury potatoes
- 3 tbsp oil
- 300 g yogurt
- salt
- pepper (from the mill)
- sugar
- 4 tbsp spring onion greens (in fine rings)
Instructions
- 1. Rinse the okra pods under running water.
- 2. Cut off the tough ends of the pods.
- 3. Place the prepared pods in a bowl.
- 4. Sprinkle the pods with salt.
- 5. Drizzle the pods with vinegar.
- 6. Cover the bowl.
- 7. Let the pods sit for thirty minutes.
- 8. Drain the pods afterwards.
- 9. Peel the potatoes.
- 10. Cut the potatoes into coarse chunks.
- 11. Peel the garlic.
- 12. Chop the garlic roughly.
- 13. Cook the potato chunks and the garlic in salted water.
- 14. Cook the ingredients for about twenty-five minutes.
- 15. Drain the cooking water.
- 16. Add two tablespoons of oil.
- 17. Add yogurt.
- 18. Mash everything with a potato masher.
- 19. Mash the mixture into a loose puree.
- 20. Season the puree with salt.
- 21. Season the puree with pepper.
- 22. Add a little more liquid if needed.
- 23. Heat one tablespoon of oil in a pan.
- 24. Fry the okra pods briefly while stirring.
- 25. Season the okra pods with salt.
- 26. Season the okra pods with pepper.
- 27. Add a pinch of sugar.
- 28. Pour in one cup of water.
- 29. Bring the water to a boil.
- 30. Let the pods cook over low heat.
- 31. Place the lid on the pan.
- 32. Cook the pods for about ten minutes.
- 33. Fill the mashed potatoes into small bowls.
- 34. Fill the okra pods into small bowls.
- 35. Cut rings from spring onions.
- 36. Garnish the dish with the spring onion rings.
