  2. 2. Place the potatoes in a pot of boiling salted water.
  3. 3. Cook the potatoes for 25 to 30 minutes until tender.
  4. 4. Rinse the leeks under running water.
  5. 5. Cut the leeks in half lengthwise and shake them dry.
  6. 6. Dice the leeks into small cubes.
  7. 7. Peel the carrots.
  8. 8. Dice the carrots into small cubes as well.
  9. 9. Blanch the leeks in boiling salted water for 30 seconds (blanching means cooking briefly in boiling water).
  10. 10. Place the carrots in the boiling salted water for 1 to 2 minutes.
  11. 11. Remove the vegetables from the water and shock them immediately with cold water.
  12. 12. Let the vegetables drain well.
  13. 13. Drain the cooked potatoes.
  14. 14. Press the potatoes through a potato ricer.
  15. 15. Mix the mashed potatoes with the milk, 50 grams of butter, and the prepared vegetables.
  16. 16. Season the mash with salt, pepper, and nutmeg.
  17. 17. Serve the potato mash in deep plates.
  18. 18. Press a small indentation into the center of the mash.
  19. 19. Pour some melted butter into the indentation.
  20. 20. Serve the dish immediately.
