🍽️ Irish-style Potato Mash with Vegetables

Ingredients
- 600 g floury potatoes
- Salt
- 1.5 stalks leek
- 3 carrots
- 250 ml lukewarm milk
- 200 g butter
- pepper (from the mill)
- Nutmeg
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in a pot of boiling salted water.
- 3. Cook the potatoes for 25 to 30 minutes until tender.
- 4. Rinse the leeks under running water.
- 5. Cut the leeks in half lengthwise and shake them dry.
- 6. Dice the leeks into small cubes.
- 7. Peel the carrots.
- 8. Dice the carrots into small cubes as well.
- 9. Blanch the leeks in boiling salted water for 30 seconds (blanching means cooking briefly in boiling water).
- 10. Place the carrots in the boiling salted water for 1 to 2 minutes.
- 11. Remove the vegetables from the water and shock them immediately with cold water.
- 12. Let the vegetables drain well.
- 13. Drain the cooked potatoes.
- 14. Press the potatoes through a potato ricer.
- 15. Mix the mashed potatoes with the milk, 50 grams of butter, and the prepared vegetables.
- 16. Season the mash with salt, pepper, and nutmeg.
- 17. Serve the potato mash in deep plates.
- 18. Press a small indentation into the center of the mash.
- 19. Pour some melted butter into the indentation.
- 20. Serve the dish immediately.
