  1. 1. Peel the potatoes, wash them thoroughly, and cut them into large cubes. Place the pieces in a large pot, cover with water, and add one teaspoon of salt.
  2. 2. Bring the water to a boil, cover the pot, and let the potatoes cook at medium heat for about 20 minutes. Drain the potatoes and save the cooking water in a bowl.
  3. 3. Heat the milk in a small saucepan. Mash the potatoes very finely using a potato masher or press them through a potato ricer.
  4. 4. Add the milk and sour cream to the potatoes and stir well with a whisk. For a creamier consistency, you can optionally stir in 100 to 150 milliliters of the reserved cooking water. Season the mash with nutmeg, salt, and pepper, and serve.
