🍽️ Crispy Potato Patties with Matjes Salad

Ingredients
- 4 Matjes fillets
- 0.25 cucumber
- 1 onion
- 1 small sour apple
- 1 gherkin
- 1 tbsp mustard
- 1 tbsp chopped dill tips
- 60 g sour cream
- 700 g sweet potatoes
- salt
- pepper (from the mill)
- nutmeg
- 1 tbsp potato starch
- 3 egg yolks
- 1 tbsp soft butter
- 4 tbsp whipping cream
- ghee (for frying)
- 150 g yogurt
- 2 tbsp chopped dill tips
- 2 tbsp whipping cream
- 1 tbsp lemon juice
- salt
- pepper (from the mill)
- apple slice
- dill
- watercress
Instructions
- 1. Drain the matjes (smoked herring).
- 2. Chop the matjes finely.
- 3. Peel the cucumber, onion, and apple.
- 4. Cut the cucumber and apple in half.
- 5. Remove the seeds from the halves.
- 6. Dice the cucumber, apple, and onion finely.
- 7. Drain the gherkins.
- 8. Dice the gherkins finely.
- 9. Mix the matjes, vegetables, and gherkins in a bowl.
- 10. Stir in the mustard, sour cream, and chopped dill tips.
- 11. Peel the potatoes.
- 12. Boil the potatoes in salted water for about 20 minutes.
- 13. Drain the potatoes.
- 14. Let the potatoes cool down slightly.
- 15. Press the potatoes through a potato ricer into a large bowl.
- 16. Stir in the starch, egg yolk, butter, cream, salt, pepper, and nutmeg.
- 17. Dust your work surface with flour.
- 18. Shape the dough into a long roll.
- 19. Cut off slices with a thickness of about 2 cm.
- 20. Fry the patties in hot butter on both sides over medium heat.
- 21. Fry them for about 3 to 4 minutes each.
- 22. Fry them until golden brown and cooked through.
- 23. Whisk all ingredients for the yogurt sauce together well.
- 24. Adjust the seasoning of the yogurt sauce to taste.
- 25. Plate the potato patties and the matjes salad.
- 26. Serve with the yogurt sauce.
- 27. Garnish the dish with apple slices, watercress, and dill.
