  2. 2. Chop the matjes finely.
  3. 3. Peel the cucumber, onion, and apple.
  4. 4. Cut the cucumber and apple in half.
  5. 5. Remove the seeds from the halves.
  6. 6. Dice the cucumber, apple, and onion finely.
  7. 7. Drain the gherkins.
  8. 8. Dice the gherkins finely.
  9. 9. Mix the matjes, vegetables, and gherkins in a bowl.
  10. 10. Stir in the mustard, sour cream, and chopped dill tips.
  11. 11. Peel the potatoes.
  12. 12. Boil the potatoes in salted water for about 20 minutes.
  13. 13. Drain the potatoes.
  14. 14. Let the potatoes cool down slightly.
  15. 15. Press the potatoes through a potato ricer into a large bowl.
  16. 16. Stir in the starch, egg yolk, butter, cream, salt, pepper, and nutmeg.
  17. 17. Dust your work surface with flour.
  18. 18. Shape the dough into a long roll.
  19. 19. Cut off slices with a thickness of about 2 cm.
  20. 20. Fry the patties in hot butter on both sides over medium heat.
