🍕 Crispy Pizza with Potatoes and Rosemary

Ingredients
- 450 g flour
- 1 tsp salt
- 0.5 cube fresh yeast (21 g)
- 3 tbsp olive oil
- flour (for the work surface)
- 600 g waxy potatoes
- 3 garlic cloves
- 2 sprigs rosemary
- oil (for the baking sheet)
- 5 tbsp sour cream
- pepper (from the mill)
- 3 tbsp freshly grated Parmesan
Instructions
- 1. Mix the flour with the salt in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Stir the yeast with 5 tablespoons of lukewarm water.
- 5. Lightly dust the rim of the bowl with some flour.
- 6. Let the dough rest covered in a warm place for approx. 15 minutes.
- 7. Add 150 milliliters of lukewarm water and the oil to the dough.
- 8. Knead everything quickly with your hands into a smooth dough.
- 9. Work the dough well on a floured surface for approx. 10 minutes.
- 10. Let the dough rise covered for a further 45 minutes.
- 11. Wash the potatoes thoroughly.
- 12. Cook the potatoes in boiling salted water for approx. 20 minutes.
- 13. Drain the potatoes and let them steam dry.
- 14. Shock the potatoes with cold water.
- 15. Peel the cooled potatoes.
- 16. Slice the potatoes into thin slices.
- 17. Peel the garlic.
- 18. Slice the garlic into very thin slices.
- 19. Rinse the rosemary.
- 20. Shake the rosemary dry.
- 21. Pick the rosemary needles into small pieces.
- 22. Preheat the oven to 220 degrees top and bottom heat.
- 23. Roll out the dough on a floured surface to the size of the baking sheet.
- 24. Place the dough in an oiled baking sheet.
- 25. Form a slightly thicker edge on the dough.
- 26. Brush the dough with the sour cream.
- 27. Lightly salt and pepper the dough.
- 28. Cover the dough with the potato slices in a shingled pattern.
- 29. Sprinkle the garlic and rosemary over it.
- 30. Drizzle olive oil over it.
- 31. Salt and pepper the topping.
- 32. Sprinkle the cheese over it.
- 33. Bake the pizza in the preheated oven for approx. 20 minutes.
- 34. Take the pizza out of the oven.
- 35. Cut the pizza into pieces.
- 36. Serve the pizza immediately.
