Ingredients
- 600 g new potatoes
- salt
- pepper
- nutmeg
- 3 clarified butter
- 1 tbsp rosemary needle (chopped)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Place the potato slices into a bowl.
- 4. Season the potatoes with salt, pepper, fresh rosemary, and a pinch of ground nutmeg.
- 5. Toss everything well so that the spices coat the potatoes evenly.
- 6. Heat half of the butter in a frying pan over medium-high heat.
- 7. Add the seasoned potatoes to the hot pan.
- 8. Turn the potatoes briefly to coat them with the melting fat.
- 9. Take the remaining butter and divide it into small cubes.
- 10. Distribute the butter flakes evenly over the surface of the potatoes.
- 11. Fry the potatoes for about 5 minutes until they are lightly golden brown.
- 12. Reduce the heat to a low setting.
- 13. Cover the pan with a lid.
- 14. Let the potatoes cook for another 30 minutes.
- 15. Do not stir the potatoes during cooking to prevent them from breaking apart.
- 16. Check if the potatoes can be easily pierced with a fork.
- 17. Remove the pan from the heat once the potatoes are tender.
- 18. Take a large plate and place it upside down over the pan.
- 19. Hold the pan and plate firmly together and flip them over quickly.
- 20. Lift the pan carefully so that the potato skillet rests on the plate.
- 21. Serve the skillet directly on the plate.
