🍽️ Crispy Potato and Green Bean Pan with Bacon

Ingredients
- 1 kg new potatoes
- sea salt
- 400 g green beans
- 50 g turkey bacon
- 4 spring onions
- 2 garlic cloves
- 2 sprigs rosemary
- 4 sprigs thyme
- 2 sprigs savory
- 2 tbsp olive oil
- pepper (from the mill)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in salted water for about 25 minutes until tender.
- 3. Drain the potatoes and let them cool down.
- 4. Cut the cooled potatoes in half lengthwise.
- 5. Trim and wash the green beans.
- 6. Boil the beans in salted water for about 8 minutes until al dente.
- 7. Shock the beans with cold water.
- 8. Let the beans drain well.
- 9. Dice the bacon into small pieces.
- 10. Trim and wash the spring onions.
- 11. Cut the spring onions into pieces about 4 centimeters long.
- 12. Peel the garlic.
- 13. Slice the garlic.
- 14. Wash the herbs and shake them dry.
- 15. Finely chop the herbs.
- 16. Heat oil in a non-stick pan.
- 17. Fry the potato halves over low heat for about 10 minutes until golden brown.
- 18. Add the bacon, spring onions, and garlic to the pan.
- 19. Season everything with salt and pepper.
- 20. Fry the mixture for about 8 more minutes, stirring occasionally.
- 21. Fold in the beans and the herbs.
- 22. Continue frying everything for 2 to 3 minutes.
- 23. Serve the pan hot.
