🍽️ Classic Potato and Goat Cheese Omelette

Ingredients
- 800 g cooked potatoes
- 250 g goat hard cheese
- 1 tbsp lemon juice
- 4 eggs
- salt
- cayenne pepper
- nutmeg
- 300 g sour cream
- 1 tbsp cornstarch
- butter (for the pan)
Instructions
- 1. Preheat the oven to 160 degrees Celsius.
- 2. Peel the potatoes and slice them thinly.
- 3. Cut the goat cheese into small cubes.
- 4. Whisk the lemon juice with the eggs and sour cream in a bowl.
- 5. Grease a small springform pan with some fat.
- 6. Separate the eggs by dividing the yolks from the whites.
- 7. Beat the egg whites until they form semi-stiff peaks.
- 8. Mix the egg yolks with the lemon juice, grated nutmeg, salt, and pepper.
- 9. Stir the sour cream and cornstarch into the egg yolk mixture.
- 10. Gently fold the egg whites into the egg yolk mixture.
- 11. Layer the potato slices alternately with the egg mixture and the cheese cubes in the springform pan.
- 12. Bake the omelette in the preheated oven at 160 degrees Celsius for about 60 minutes until set.
- 13. Remove the omelette from the oven and let it cool.
- 14. Cut the cooled omelette into pieces and serve.
