  4. 4. Whisk the lemon juice with the eggs and sour cream in a bowl.

  6. 6. Separate the eggs by dividing the yolks from the whites.
  7. 7. Beat the egg whites until they form semi-stiff peaks.
  8. 8. Mix the egg yolks with the lemon juice, grated nutmeg, salt, and pepper.
  9. 9. Stir the sour cream and cornstarch into the egg yolk mixture.
  10. 10. Gently fold the egg whites into the egg yolk mixture.
  11. 11. Layer the potato slices alternately with the egg mixture and the cheese cubes in the springform pan.
  12. 12. Bake the omelette in the preheated oven at 160 degrees Celsius for about 60 minutes until set.
