🍽️ Crispy Potato Dumplings with Mushroom Sauce

Ingredients
- 10 g dried porcini mushrooms
- 500 g button mushrooms
- 250 g chanterelles
- 1 onion
- 1 clove of garlic
- 2 tbsp clarified butter
- salt
- pepper (from the mill)
- juice of one lemon
- 150 g crème fraîche
- 100 vegetable broth
- 2 tbsp chive rings
- 800 g potatoes (floury/cooking type)
- 2 eggs
- 150 g flour
- salt
- pepper (from the mill)
- nutmeg
- 2 tbsp clarified butter
Instructions
- 1. Soak the porcini mushrooms in hot water until they are soft.
- 2. Wash the potatoes thoroughly.
- 3. Place the potatoes in a pot and cover them with salted water.
- 4. Cook the potatoes for about 30 minutes until tender.
- 5. Peel the hot potatoes.
- 6. Press the hot potatoes through a potato ricer.
- 7. Let the potato mixture cool down.
- 8. Add the eggs and flour to the cooled potato mixture.
- 9. Knead everything into a smooth dough.
- 10. Season the dough with nutmeg, salt, and pepper.
- 11. Moisten your hands with a little flour.
- 12. Shape finger-thick and thumb-long rolls from the dough.
- 13. Slightly taper the ends of the rolls.
- 14. Bring plenty of salted water to a boil in a pot.
- 15. Add the potato dumplings to the boiling water.
- 16. Let the dumplings simmer on low heat for about 2 minutes.
- 17. Carefully remove the dumplings.
- 18. Dip the dumplings briefly in cold water.
- 19. Let the dumplings drain well in a sieve.
- 20. Clean the mushrooms and chop them finely.
- 21. Finely chop the soaked porcini mushrooms.
- 22. Finely chop the onions.
- 23. Heat 2 tablespoons of butter fat in a pot.
- 24. Sauté the onions until translucent.
- 25. Add the mushrooms to the onion mixture.
- 26. Fry the mushrooms briefly.
- 27. Stir in the lemon juice.
- 28. Add the broth.
- 29. Stir in the crème fraîche.
- 30. Season the sauce with salt and pepper.
- 31. Heat clarified butter in a frying pan.
- 32. Fry the potato dumplings until golden brown.
- 33. Plate the dumplings.
- 34. Add the mushroom sauce.
- 35. Sprinkle the dish with chives.
- 36. Serve the dish immediately.
