  6. 6. Press the hot potatoes through a potato ricer.
  7. 7. Let the potato mixture cool down.
  8. 8. Add the eggs and flour to the cooled potato mixture.
  9. 9. Knead everything into a smooth dough.
  10. 10. Season the dough with nutmeg, salt, and pepper.
  11. 11. Moisten your hands with a little flour.
  12. 12. Shape finger-thick and thumb-long rolls from the dough.
  13. 13. Slightly taper the ends of the rolls.
