🍽️ Potato Rings with Red Cabbage and Apple Salad

Ingredients
- 1 kg potatoes
- 2 eggs
- 60 g potato flour
- 40 g flour
- salt
- 1 small red cabbage
- 2 Boskop apples
- salt
- pepper (from the mill)
- 3 tbsp apple cider vinegar
- 0.5 tsp mustard
- 2 pinches of sugar
- 5 tbsp sunflower oil
Instructions
- 1. Remove the hard core parts from the red cabbage.
- 2. Cut the red cabbage in half and then into quarters.
- 3. Slice the red cabbage pieces into thin strips.
- 4. Peel the apples.
- 5. Cut the apples into quarters.
- 6. Remove the core from the apple quarters.
- 7. Dice the apple pieces into small cubes.
- 8. Add the apple cubes to the red cabbage strips.
- 9. Whisk vinegar, sugar, salt, pepper, and mustard together in a small bowl.
- 10. Stir the oil into the spice mixture.
- 11. Season the salad dressing to taste with salt and pepper.
- 12. Pour the salad dressing over the red cabbage and apples.
- 13. Mix everything well and let the salad marinate.
- 14. Peel the potatoes.
- 15. Rinse the peeled potatoes.
- 16. Boil the potatoes in salted water for about 25 minutes.
- 17. Drain the cooking water.
- 18. Let the potatoes drain for a moment.
- 19. Press the potatoes through a potato ricer.
- 20. Add the eggs to the mashed potatoes.
- 21. Add the potato flour.
- 22. Add a pinch of salt.
- 23. Knead everything into a smooth dough.
- 24. Dust your work surface with flour.
- 25. Form walnut-sized pieces from the dough.
- 26. Poke a hole in the center of each dough piece with your finger.
- 27. Shape the pieces into rings.
- 28. Bring plenty of water to a boil in a pot.
- 29. Add the potato rings to the boiling water.
- 30. Reduce the heat so the water is simmering gently.
- 31. Cook the rings until they float to the surface.
- 32. Cook the rings for another 3 minutes.
- 33. Lift the finished potato rings out with a slotted spoon.
- 34. Let the rings drain well.
- 35. Serve the potato rings with the red cabbage and apple salad.
