  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the bottom of each potato flat so that it stands stably.
  3. 3. Grease a piece of aluminum foil with a little oil.
  4. 4. Wrap each potato tightly in the prepared aluminum foil.
  5. 5. Preheat the oven to 200 degrees.
  6. 6. Place the wrapped potatoes in the oven and bake them for about 45 minutes.
  7. 7. Wash the spinach thoroughly.
  8. 8. Bring water to a boil and add some salt.
  9. 9. Add the spinach to the boiling water and let it wilt briefly.
  10. 10. Drain the spinach and rinse it immediately with cold water to stop the cooking process.
  11. 11. Squeeze the spinach well to remove excess liquid.
  12. 12. Finely chop the spinach.
  13. 13. Peel the onion and chop it finely as well.
  14. 14. Melt butter in a pan.
  15. 15. Sauté the onions in the hot fat.
  16. 16. Add the chopped spinach to the onion and sauté briefly.
  17. 17. Dust the mixture with flour.
  18. 18. Pour in the cream.
  19. 19. Let the sauce come to a brief boil until it thickens slightly.
  20. 20. Take the potatoes out of the oven and let them cool briefly.
  21. 21. Cut off the top of the potatoes.
  22. 22. Carefully hollow out the inside of the potatoes.
  23. 23. Mash the hollowed-out potato flesh with a fork.
  24. 24. Stir the mashed potato flesh into the spinach mixture.
  25. 25. Season the filling with salt, pepper, and sage.
  26. 26. Fill the empty potato shells with the spinach mixture.
  27. 27. Lightly grease a baking dish.
  28. 28. Place the stuffed potatoes in the baking dish.
  29. 29. Preheat the oven to 180 degrees.
  30. 30. Warm the potatoes in the oven for 10 minutes.
  31. 31. Top the potatoes with cheese.
  32. 32. Turn the oven up to 220 degrees.
  33. 33. Bake the potatoes for another 5 minutes until the cheese melts and turns golden brown.
