🍽️ Potatoes with Herb Quark

Ingredients
- 400 g small waxy potatoes
- 300 g quark
- 80 g sour cream
- salt
- pepper (from the mill)
- 2 tbsp chive rings
- 2 tbsp chopped parsley
- 2 tsp thyme leaves
- 2 spring onions
- 1 carrot
Instructions
- 1. Wash the potatoes thoroughly and scrub them clean.
- 2. Place the potatoes in a pot and cover them with salted water.
- 3. Cook the potatoes in the covered pot for about 25 minutes.
- 4. Wash the spring onions and trim off the ends.
- 5. Slice the spring onions into thin rings.
- 6. Mix the quark with the sour cream in a bowl.
- 7. Season the quark mixture with salt and pepper.
- 8. Shred the carrots into fine sticks and mix them into the quark.
- 9. Stir the herbs and the spring onion rings into the quark mixture.
- 10. Drain the cooking water from the potatoes.
- 11. Peel the potatoes if you prefer, or leave them unpeeled.
- 12. Plate the potatoes.
- 13. Serve the potatoes together with the herb quark and the carrot sticks.
