  1. 1. Wash the potatoes thoroughly and scrub them clean.
  2. 2. Place the potatoes in a pot and cover them with salted water.
  3. 3. Cook the potatoes in the covered pot for about 25 minutes.
  4. 4. Wash the spring onions and trim off the ends.
  5. 5. Slice the spring onions into thin rings.
  6. 6. Mix the quark with the sour cream in a bowl.
  7. 7. Season the quark mixture with salt and pepper.
  8. 8. Shred the carrots into fine sticks and mix them into the quark.
  9. 9. Stir the herbs and the spring onion rings into the quark mixture.
  10. 10. Drain the cooking water from the potatoes.
  11. 11. Peel the potatoes if you prefer, or leave them unpeeled.
  12. 12. Plate the potatoes.
  13. 13. Serve the potatoes together with the herb quark and the carrot sticks.
