🍽️ Potatoes with Pepper Quark

Ingredients
- 1 kg potatoes
- 1 bell pepper
- 1 bell pepper
- 1 tbsp oil
- 200 ml water
- 500 g quark
- salt
- pepper (from the mill)
- 2 tbsp parsley
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Place the unpeeled potatoes in a pot with cold, salted water.
- 3. Cook the potatoes for about 25 minutes until they are tender.
- 4. Remove the seeds and the white pith from the bell peppers.
- 5. Wash the bell peppers and halve them.
- 6. Cut the pepper halves into small cubes.
- 7. Heat the oil in a small pot.
- 8. Sauté the pepper cubes in the hot oil.
- 9. Pour the water over the pepper cubes.
- 10. Simmer the mixture for about 8 minutes.
- 11. Cook the peppers until soft and the liquid has almost completely evaporated.
- 12. Stir the warm pepper cubes along with the remaining liquid into the quark.
- 13. Season the quark mixture with salt and pepper.
- 14. Finely chop the parsley and sprinkle it over the quark cream.
- 15. Peel the cooked potatoes.
- 16. Serve the potatoes together with the pepper quark cream.
