🍽️ Oven Potatoes with Spicy Minced Meat and Bean Topping

Ingredients
- 4 larger potatoes
- salt
- 250 g kidney beans (from the can, drained)
- 2 tbsp oil
- 150 g mixed minced meat
- 2 tbsp ketchup
- 0.25 tsp chili powder
- 100 g grated cheese (e.g. Gouda, Cheddar)
- pepper (from the mill)
- 2 tbsp chopped parsley
- 100 g sour cream
- 1 tsp lime juice
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes with the skin on in salted water until they are almost soft.
- 3. Heat the oil in a pan.
- 4. Fry the minced meat in the pan until crumbly.
- 5. Stir in ketchup, beans, and cheese into the meat.
- 6. Season the meat mixture with chili powder, salt, and pepper.
- 7. Drain the cooked potatoes.
- 8. Let the potatoes steam for a moment.
- 9. Cut the potatoes in half lengthwise.
- 10. Grease a baking dish.
- 11. Place the potato halves with the cut side up in the dish.
- 12. Distribute the meat and bean mixture evenly over the potatoes.
- 13. Preheat the oven to 200 degrees Celsius.
- 14. Bake the potatoes in the oven for about 15 minutes.
- 15. Mix the parsley with the sour cream.
- 16. Season the dip sauce with salt, pepper, and lime juice.
- 17. Serve the hot potatoes together with the parsley dip.
