🍽️ Crispy Oven Potato Sticks with Homemade Garlic Dip

Ingredients
- 600 g waxy potatoes
- 2 onions
- sea salt
- 2 sprigs rosemary
- 2 sprigs thyme
- 5 large garlic cloves
- 3 egg yolks
- 1 tsp hot mustard
- salt
- white pepper
- 300 ml olive oil
- 0.5 tbsp lemon juice
Instructions
- 1. Peel the potatoes and rinse them thoroughly under running water.
- 2. Cut the potatoes into even wedges.
- 3. Peel the onions and slice them into thin rings.
- 4. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 5. Line a baking tray with baking paper.
- 6. Spread the potato wedges evenly on the tray.
- 7. Sprinkle sea salt over the potatoes.
- 8. Distribute the onion rings and herbs evenly over the potatoes.
- 9. Drizzle everything generously with olive oil.
- 10. Place the potatoes in the preheated oven.
- 11. Bake them for 35 to 40 minutes until they are golden brown and crispy.
- 12. Peel the garlic cloves while the potatoes are baking.
- 13. Press the garlic through a garlic press into a small bowl.
- 14. Add the egg yolk, mustard, a pinch of salt, and pepper to a large mixing bowl.
- 15. Whisk the ingredients with a whisk until white and creamy.
- 16. Add the oil drop by drop at first, while continuing to whisk.
- 17. Wait until each drop of oil is fully incorporated before adding the next one.
- 18. Add the remaining oil slowly in a thin stream while whisking constantly.
- 19. Season the finished dip with a little salt and lemon juice.
- 20. Serve the dip alongside the hot oven potatoes.
