🍽️ Spanish-style Potatoes in Tomato Sauce

Ingredients
- 800 g mostly waxy potatoes
- salt
- 6 tomatoes
- 1 onion
- 1 clove of garlic
- 1 mild red chili pepper
- 2 tbsp olive oil
- 1 tbsp tomato paste
- Tabasco
- brown sugar
- oil (for frying)
- 1 tbsp freshly chopped parsley
Instructions
- 1. Peel the potatoes.
- 2. Cut them into coarse cubes.
- 3. Place the potato cubes in salted water.
- 4. Cook them for about 5 minutes.
- 5. Shock the potatoes with cold water.
- 6. Let them drain well.
- 7. Peel the tomatoes.
- 8. Cut the tomatoes into quarters.
- 9. Remove the seeds.
- 10. Dice the tomatoes.
- 11. Peel the onion.
- 12. Peel the garlic.
- 13. Finely dice the onion and garlic.
- 14. Wash the chili pepper.
- 15. Halve the chili pepper.
- 16. Remove the seeds and the inside.
- 17. Chop the chili pepper finely.
- 18. Heat oil in a pan.
- 19. Sauté the onion, garlic, and chili for about 2 minutes.
- 20. Stir in the tomatoes.
- 21. Let the sauce simmer for about 5 minutes.
- 22. Season with Tabasco, salt, and a little sugar.
- 23. Pat the potatoes dry.
- 24. Fry the potatoes in hot oil until golden brown.
- 25. Cook the potatoes for about 5 more minutes.
- 26. Mix the potatoes with the tomato sauce.
- 27. Sprinkle the dish with parsley.
- 28. Serve the potatoes hot.
