  1. 1. Rinse the potatoes under running water and scrub them clean with a brush.
  2. 2. Cut the potatoes in half lengthwise.
  3. 3. Pour the oil into a small bowl.
  4. 4. Season the oil with salt and pepper and stir well.
  5. 5. Wash the thyme sprigs and shake off excess water.
  6. 6. Cut the thyme sprigs into pieces about 2 to 3 centimeters long using scissors.
  7. 7. Brush the cut surfaces of the potato halves with the seasoned oil.
  8. 8. Place the potatoes on a baking sheet with the cut side facing down.
  9. 9. Place a small piece of thyme under each potato half.
  10. 10. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
  11. 11. Place the tray on the middle rack in the oven.
  12. 12. Bake the potatoes for 30 to 35 minutes.
