🍽️ Crispy Pan-Fried Potatoes with Meat Strips

Ingredients
- 800 g boiled potatoes (firm-cooking; best cooled overnight)
- 250 g boiled beef (soup meat, e.g. brisket or boiled beef)
- 2 onions
- 2 tbsp clarified butter (for frying)
- 1 tsp dried marjoram
- 2 tbsp freshly chopped parsley
- salt
- pepper (from the mill)
- cumin (ground)
Instructions
- 1. Peel the potatoes and slice them into rounds about 3 to 4 millimeters thick.
- 2. Cut the meat into strips, removing any excess fat beforehand if necessary.
- 3. Peel the onions, halve them, and slice them into strips as well.
- 4. Heat ghee (clarified butter) in a large frying pan.
- 5. Fry the potato slices for 4 to 5 minutes until lightly golden brown.
- 6. Turn the potatoes as little as possible so they color evenly.
- 7. Add the onion strips to the pan and fry everything for another 5 minutes.
- 8. Add the meat and marjoram, then fry the mixture for 4 to 5 minutes until golden brown.
- 9. Fold in the chopped parsley to the finished pan mixture.
- 10. Season the dish to taste with salt, pepper, and cumin, then serve.
