  1. 1. Peel the apples and remove the core.
  2. 2. Grate the apple flesh finely.
  3. 3. Peel the potatoes.
  4. 4. Grate the potatoes finely as well.
  5. 5. Squeeze the lemon.
  6. 6. Add the lemon juice along with the grated apples and potatoes to a pot.
  7. 7. Split the vanilla pod lengthwise.
  8. 8. Scrape out the seeds (pulp) from the pod.
  9. 9. Add the vanilla seeds, the empty pod, and the apple juice to the mixture in the pot.
  10. 10. Heat the mixture while stirring constantly until it boils.
  11. 11. Let the jam simmer for about 5 minutes over low heat.
  12. 12. Add the sugar.
  13. 13. Let the jam boil vigorously for about 4 minutes.
  14. 14. Perform a gel test to check if the jam sets.
  15. 15. Remove the vanilla pod from the jam.
  16. 16. Fill the hot jam into clean, prepared jars.
  17. 17. Seal the jars tightly.
  18. 18. Turn the jars upside down for 10 minutes.
  19. 19. Turn the jars back upright.
  20. 20. Let the jam cool down completely in the jars.
