🍽️ Creative Potato and Apple Jam

Ingredients
- 400 g sour apples
- 400 g floury potatoes
- 1 lemon
- 1 vanilla pod
- 0.5 l apple juice
- 500 g pectin sugar from raw cane sugar (2:1)
Instructions
- 1. Peel the apples and remove the core.
- 2. Grate the apple flesh finely.
- 3. Peel the potatoes.
- 4. Grate the potatoes finely as well.
- 5. Squeeze the lemon.
- 6. Add the lemon juice along with the grated apples and potatoes to a pot.
- 7. Split the vanilla pod lengthwise.
- 8. Scrape out the seeds (pulp) from the pod.
- 9. Add the vanilla seeds, the empty pod, and the apple juice to the mixture in the pot.
- 10. Heat the mixture while stirring constantly until it boils.
- 11. Let the jam simmer for about 5 minutes over low heat.
- 12. Add the sugar.
- 13. Let the jam boil vigorously for about 4 minutes.
- 14. Perform a gel test to check if the jam sets.
- 15. Remove the vanilla pod from the jam.
- 16. Fill the hot jam into clean, prepared jars.
- 17. Seal the jars tightly.
- 18. Turn the jars upside down for 10 minutes.
- 19. Turn the jars back upright.
- 20. Let the jam cool down completely in the jars.
