  5. 5. Let the potatoes steam dry for a moment.
  6. 6. Mix the warm potatoes with the egg yolks, Parmesan, and butter to form a pliable dough.
  7. 7. Add a little flour if the dough is too sticky.
  8. 8. Season the mixture with salt, pepper, and nutmeg.
  9. 9. Pat the mozzarella dry.
  10. 10. Cut the mozzarella into small cubes.
  11. 11. Mix the cheese cubes with the basil.
  12. 12. Divide the potato mixture into about 20 portions.
  13. 13. Flatten them into discs.
  14. 14. Fill them with the cheese-basil mixture.
  15. 15. Shape them back into elongated balls.
  16. 16. Fry the croquettes in batches in hot oil for 4 to 5 minutes until they are golden brown and crispy.
