🍽️ Crispy Potato Croquettes with Cheese Filling

Ingredients
- 800 g mealy-cooking potatoes
- salt
- 2 egg yolks
- 2 tbsp freshly grated Parmesan
- 2 tbsp butter
- 1 tbsp flour
- pepper
- nutmeg (freshly grated)
- 120 g mozzarella
- 1 tbsp freshly chopped basil
- 4 tbsp flour
- 2 eggs
- 100 g breadcrumbs
- vegetable oil (for frying)
Instructions
- 1. Peel the potatoes.
- 2. Boil them in salted water for about 30 minutes until tender.
- 3. Drain the water.
- 4. Press the potatoes through a ricer.
- 5. Let the potatoes steam dry for a moment.
- 6. Mix the warm potatoes with the egg yolks, Parmesan, and butter to form a pliable dough.
- 7. Add a little flour if the dough is too sticky.
- 8. Season the mixture with salt, pepper, and nutmeg.
- 9. Pat the mozzarella dry.
- 10. Cut the mozzarella into small cubes.
- 11. Mix the cheese cubes with the basil.
- 12. Divide the potato mixture into about 20 portions.
- 13. Flatten them into discs.
- 14. Fill them with the cheese-basil mixture.
- 15. Shape them back into elongated balls.
- 16. Fry the croquettes in batches in hot oil for 4 to 5 minutes until they are golden brown and crispy.
- 17. Let the finished croquettes drain on kitchen paper.
- 18. Serve them with tomato salsa if desired.
