🍽️ Crispy Chicken Potato Croquettes

Ingredients
- 500 g starchy potatoes
- salt
- 300 g chicken breast fillet
- 2 egg yolks
- 2 tbsp freshly grated parmesan
- 2 tbsp butter
- 1 tbsp chopped parsley
- 1 tbsp flour
- pepper
- nutmeg (freshly grated)
- 4 tbsp flour
- 2 eggs
- 100 g white bread crumbs
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in salted water and boil them for about 30 minutes until tender.
- 3. Wash the chicken meat and pat it dry with a kitchen towel.
- 4. Process the meat finely by grinding it through a meat grinder or chopping it in a food processor.
- 5. Drain the cooked potatoes and press them through a potato ricer.
- 6. Let the potatoes steam for a short moment to release excess moisture.
- 7. Mix the potatoes with the egg yolks, Parmesan, butter, parsley, and chicken meat to form a dough.
- 8. If the dough is too sticky, add a little flour until it is easy to shape.
- 9. Season the dough with salt, pepper, and nutmeg to taste.
- 10. Preheat the oven to 180 degrees Celsius with fan setting.
- 11. Divide the potato dough into two or three portions.
- 12. Shape the dough portions on a floured surface into long rolls with a diameter of about 2 to 3 centimeters.
- 13. Cut the rolls into pieces about 6 centimeters long.
- 14. Shape the pieces into small, oval balls.
- 15. Roll the balls briefly in flour.
- 16. Whisk the remaining eggs in a bowl.
- 17. Dip the balls one by one into the beaten eggs.
- 18. Fill the breadcrumbs into a shallow plate.
- 19. Roll the egg-coated balls in the breadcrumbs until they are fully covered.
- 20. Place the finished croquettes on a baking sheet lined with baking paper.
- 21. Bake the croquettes in the preheated oven for about 20 minutes until golden brown.
