  2. 2. Place the potatoes in salted water and boil them for about 30 minutes until tender.
  3. 3. Wash the chicken meat and pat it dry with a kitchen towel.
  4. 4. Process the meat finely by grinding it through a meat grinder or chopping it in a food processor.
  5. 5. Drain the cooked potatoes and press them through a potato ricer.
  6. 6. Let the potatoes steam for a short moment to release excess moisture.
  7. 7. Mix the potatoes with the egg yolks, Parmesan, butter, parsley, and chicken meat to form a dough.
  8. 8. If the dough is too sticky, add a little flour until it is easy to shape.
  9. 9. Season the dough with salt, pepper, and nutmeg to taste.
  10. 10. Preheat the oven to 180 degrees Celsius with fan setting.
  11. 11. Divide the potato dough into two or three portions.
  12. 12. Shape the dough portions on a floured surface into long rolls with a diameter of about 2 to 3 centimeters.
