  2. 2. Grate the raw potatoes finely.
  3. 3. Place the grated potatoes in a kitchen towel.
  4. 4. Squeeze the potatoes firmly in the towel to remove the liquid.
  5. 5. Peel the cooked potatoes.
  6. 6. Press the cooked potatoes through a potato ricer.
  7. 7. Mix the pressed potatoes with the grated raw potatoes.
  8. 8. Pour the lukewarm milk into the potato mixture.
  9. 9. Add the potato flour.
  10. 10. Season the mixture with salt, pepper, and nutmeg.
  11. 11. Shape the mixture into small dumplings.
  12. 12. Heat plenty of salted water in a pot.
  13. 13. Add the dumplings to the hot water.
  14. 14. Reduce the heat so the water is just simmering gently.
  15. 15. Let the dumplings cook for about 20 minutes.
  16. 16. Remove the dumplings as soon as they float to the surface.
