🍽️ Potato Dumplings with Crispy Butter Crumbs

Ingredients
- 500 g cooked potatoes (from the day before)
- 500 g floury potatoes
- 125 ml lukewarm milk
- 4 tbsp potato flour
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- 125 g butter
- 100 g breadcrumbs
Instructions
- 1. Peel the raw potatoes and wash them thoroughly.
- 2. Grate the raw potatoes finely.
- 3. Place the grated potatoes in a kitchen towel.
- 4. Squeeze the potatoes firmly in the towel to remove the liquid.
- 5. Peel the cooked potatoes.
- 6. Press the cooked potatoes through a potato ricer.
- 7. Mix the pressed potatoes with the grated raw potatoes.
- 8. Pour the lukewarm milk into the potato mixture.
- 9. Add the potato flour.
- 10. Season the mixture with salt, pepper, and nutmeg.
- 11. Shape the mixture into small dumplings.
- 12. Heat plenty of salted water in a pot.
- 13. Add the dumplings to the hot water.
- 14. Reduce the heat so the water is just simmering gently.
- 15. Let the dumplings cook for about 20 minutes.
- 16. Remove the dumplings as soon as they float to the surface.
- 17. Let the dumplings drain in a sieve.
- 18. Melt the butter in a frying pan.
- 19. Fry the crumbs in the butter until golden brown.
- 20. Arrange the finished dumplings on plates.
- 21. Drizzle the dumplings with the warm butter crumbs.
- 22. Serve the dish immediately.
