Ingredients
- 1 kg floury potatoes
- 100 g flour
- 2 eggs
- salt
- pepper (from the mill)
- 1 shallot
- 1 tbsp butter
- 125 g bacon (streaky, smoked, finely diced)
- 250 g mixed minced meat
- 2 tbsp breadcrumbs
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Boil the potato pieces in salted water for about 25 minutes.
- 4. Drain the cooking water and let the potatoes steam dry for a moment.
- 5. Press the hot potatoes through a potato ricer into a large bowl.
- 6. Add flour and eggs to the potato mixture.
- 7. Knead everything into a smooth dough.
- 8. Season the dough with salt and pepper.
- 9. Peel the shallot and chop it finely.
- 10. Sauté the shallot in hot butter until translucent.
- 11. Mix the shallot with the bacon cubes, the minced meat, and the breadcrumbs.
- 12. Season the filling with salt and pepper.
- 13. Take dough portions about the size of a tennis ball.
- 14. Flatten the dough pieces and fill them with the minced meat mixture.
- 15. Seal the dumplings carefully so that nothing leaks out.
- 16. Bring 3 liters of salted water to a boil.
- 17. Cook the dumplings in it for about 20 minutes.
- 18. Let the water simmer gently while cooking, not boiling vigorously.
- 19. Serve the finished dumplings with a small salad.
