  1. 1. Peel the raw potatoes and grate them finely into a bowl of cold water.
  2. 2. Place the grated potatoes in a clean kitchen towel and squeeze out all the liquid firmly.
  3. 3. Finely grate the pre-cooked potatoes as well.
  4. 4. Heat the milk and pour it over the cooked potatoes.
  5. 5. Stir the potato and milk mixture until smooth.
  6. 6. Knead the grated raw potatoes and the cooked potato mixture together with salt to form a firm dough.
  7. 7. Wash the celery and cut it into small cubes.
  8. 8. Heat oil in a pan.
  9. 9. Fry the minced meat together with the celery in the pan.
  10. 10. Let the meat filling cool down completely.
  11. 11. Wet your hands with water.
  12. 12. Form balls from the potato dough.
  13. 13. Press a small indentation into each ball and place some of the cooled minced meat filling inside.
  14. 14. Close the dumplings back into round shapes.
  15. 15. Bring plenty of water to a boil in a large pot.
  16. 16. Gently add the dumplings to the boiling water.
  17. 17. Cook the dumplings in the water for 20 minutes.
  18. 18. Remove the finished dumplings from the water.
  19. 19. Let the dumplings drain well.
  20. 20. Heat butter in a pan.
  21. 21. Fry the dumplings on all sides until golden brown.
