  1. 1. Wash the potatoes thoroughly.
  2. 2. Boil them with the skin on in salted water for about 25 minutes.
  3. 3. Drain the water.
  4. 4. Let the potatoes steam for a moment to release excess moisture.
  5. 5. Peel the potatoes.
  6. 6. Press them through a potato ricer.
  7. 7. Add two-thirds of the required flour.
  8. 8. Add the eggs.
  9. 9. Add salt.
  10. 10. Add ground nutmeg.
  11. 11. Knead everything into a soft but manageable dough.
  12. 12. Check if the dough is too sticky.
  13. 13. If so, knead in a little more flour.
  14. 14. Cut the bread into small cubes.
  15. 15. Toast the cubes in butter until golden brown.
  16. 16. Lightly flour your hands.
  17. 17. Take portions of the dough.
  18. 18. Shape them into dumplings.
  19. 19. Flatten the dumplings slightly.
  20. 20. Place the toasted bread cubes on top.
  21. 21. Pull the dough over the filling to seal it.
  22. 22. Place the dumplings in boiling salted water.
  23. 23. Let them simmer gently for about 20 minutes.
