🍽️ Silesian Potato Dumplings with Crispy Bacon

Ingredients
- 1 kg potatoes
- 100 g wheat flour
- 4 tbsp potato flour
- 2 eggs
- salt
- flour (for working)
- 3 tbsp butter
- 150 g bacon cubes
Instructions
- 1. Wash the potatoes thoroughly and peel them.
- 2. Place the potatoes in a pot with plenty of salted water.
- 3. Cook the potatoes for 30 minutes until they are soft.
- 4. Drain the water and let the potatoes drain well.
- 5. Mash the potatoes finely using a press or a fork.
- 6. Let the potato mixture cool down briefly.
- 7. Add the flour, potato flour, salt, and eggs to the mixture.
- 8. Knead the ingredients thoroughly into a smooth dough.
- 9. Sprinkle some flour on your work surface.
- 10. Dust your hands with flour as well.
- 11. Form small balls from the dough, about the size of a walnut.
- 12. Press the balls slightly flat.
- 13. Press a small indentation into the center of each dumpling with your finger.
- 14. Bring a pot of salted water to a gentle simmer.
- 15. Cook the dumplings in the liquid for about 5 minutes.
- 16. Remove the dumplings from the pot as soon as they float to the surface.
- 17. Let the finished dumplings drain well.
- 18. Warm the butter and bacon in a frying pan.
- 19. Toss the dumplings in the pan so they are coated with bacon and butter.
- 20. Season the dumplings lightly with salt to taste.
- 21. Arrange the dumplings on a plate and serve them warm.
