  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Place the potatoes in salted water and cook them for about 30 minutes until tender.
  3. 3. Drain the cooking water and press the hot potatoes through a potato ricer.
  4. 4. Add the flour, the egg, some salt, and nutmeg to the potatoes.
  5. 5. Knead everything into a smooth dough.
  6. 6. Bring plenty of salted water to a boil in a pot.
  7. 7. Mix the starch with a little cold water until smooth.
  8. 8. Add the starch mixture to the hot water.
  9. 9. Season the low-fat quark with salt and pepper.
  10. 10. Moisten your hands with a little water.
  11. 11. Take portions of dough and shape them into small balls.
  12. 12. Press a deep indentation into the center of each ball using your thumb.
  13. 13. Fill the indentations with the seasoned quark.
  14. 14. Carefully close the dumplings so that the filling stays inside.
  15. 15. Let the dumplings cook in the hot water for about 20 minutes.
  16. 16. Lift the finished dumplings out of the water with a slotted spoon.
  17. 17. Let them drain for a short moment.
  18. 18. Finely chop the parsley and mix it with the dumplings.
  19. 19. Arrange the dumplings in a bowl and serve them warm.
