🍽️ Polish-style Potato Dumplings with Quark Filling

Ingredients
- 1 kg floury potatoes
- 125 g flour (a little more if needed)
- 1 egg
- salt
- nutmeg
- 2 tbsp cornstarch
- 500 g low-fat quark (well drained and squeezed)
- salt
- white pepper
- chopped parsley (for garnish)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in salted water and cook them for about 30 minutes until tender.
- 3. Drain the cooking water and press the hot potatoes through a potato ricer.
- 4. Add the flour, the egg, some salt, and nutmeg to the potatoes.
- 5. Knead everything into a smooth dough.
- 6. Bring plenty of salted water to a boil in a pot.
- 7. Mix the starch with a little cold water until smooth.
- 8. Add the starch mixture to the hot water.
- 9. Season the low-fat quark with salt and pepper.
- 10. Moisten your hands with a little water.
- 11. Take portions of dough and shape them into small balls.
- 12. Press a deep indentation into the center of each ball using your thumb.
- 13. Fill the indentations with the seasoned quark.
- 14. Carefully close the dumplings so that the filling stays inside.
- 15. Let the dumplings cook in the hot water for about 20 minutes.
- 16. Lift the finished dumplings out of the water with a slotted spoon.
- 17. Let them drain for a short moment.
- 18. Finely chop the parsley and mix it with the dumplings.
- 19. Arrange the dumplings in a bowl and serve them warm.
