  1. 1. Peel the potatoes thoroughly and rinse them under cold water.
  2. 2. Slice the potatoes into rounds about 5 millimeters thick.
  3. 3. Ensure the slices stay intact and arrange them tightly next to each other in the baking dish.
  4. 4. Peel the garlic clove and rub the inside of the baking dish with it.
  5. 5. Press the potato slices flat and spread them out in the dish.
  6. 6. Finely chop the garlic.
  7. 7. Mix the chopped garlic with the soy cream, salt, pepper, and a pinch of freshly grated nutmeg.
  8. 8. Pour the cream mixture evenly over the potatoes.
  9. 9. Preheat the oven to 225 degrees Celsius conventional heat (fan: 200 degrees, gas: level 3 to 4).
  10. 10. Bake the gratin for about 35 minutes in the preheated oven.
  11. 11. Grate the vegan cheese finely while waiting.
  12. 12. Sprinkle the grated cheese over the potatoes after 35 minutes.
  13. 13. Continue baking the dish for another 10 minutes.
  14. 14. Wash the thyme sprigs and shake them dry.
  15. 15. Pluck the thyme leaves and distribute them over the gratin shortly before the end of the cooking time.
