  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Wash the savoy cabbage and separate four large, intact leaves.
  3. 3. Blanch these four leaves briefly in salted water, plunge them into cold water, and pat them dry.
  4. 4. Cut the remaining cabbage in half, remove the hard core, and slice it into thin strips.
  5. 5. Peel the onion and dice it finely.
  6. 6. Heat two tablespoons of oil in a pan and sauté the onions until translucent.
  7. 7. Add the cabbage strips, pour in two tablespoons of water, and mix in the cumin.
  8. 8. Simmer the cabbage on low heat for five to six minutes.
  9. 9. Season the mixture with salt and pepper and remove it from the heat.
  10. 10. Melt the butter in a saucepan and stir in the flour.
  11. 11. Let the mixture sweat briefly without letting it turn brown.
  12. 12. Pour in the milk and cream in small batches while stirring constantly.
  13. 13. Let the sauce thicken slightly for four to five minutes.
  14. 14. Season the sauce with salt, pepper, and grated nutmeg.
  15. 15. Grease a baking dish with some butter.
  16. 16. Line the dish with the prepared cabbage leaves.
  17. 17. Cut the bacon into thin strips.
  18. 18. Peel the potatoes and wash them thoroughly.
  19. 19. Mix the potatoes with the sautéed cabbage and the bacon strips.
  20. 20. Layer the potato mixture, cheese, and sauce alternately in the dish.
  21. 21. Always finish each layer with a layer of cheese.
  22. 22. Place the bacon slices on top of the gratin.
  23. 23. Bake the gratin for about 45 minutes in the preheated oven.
  24. 24. Remove the dish from the oven and portion it into pieces.
  25. 25. Serve the gratin hot.
